Without a camera I am unable to show you how delicious my dinner was this evening but instead I will give you the recipe. You see today I am just a little sick, sore throat and feeling tried. Now it must be said that it is super dusty in Dubai over the last few days so maybe this has something to do with it, but also today is 12 months since friends were killed in a horrific attack in Afghanistan.
So when it comes to comfort food chicken soup is a well known dish. Though I am getting very interested in ancient wisdom and macrobiotics so the standard chicken soup was just not going to do the trick today.
Chicken and Lemongrass Soup:
2 cups of Organic garlic and herb stock
1 small chicken breast sliced in thin strips
4 small chunks of ginger
1 shot of lemon grass cut to release flavours
4 small pickling onions
1 small carrot
4 garlic cloves
2 green chilies – slit down the centre but still on stork
Dissolve one garlic and herb stock cube in 2 cups of water
Place on stove on a low temp
Place lemongrass and chili in a muslin bag for easy removal
Slice onions into quarters
Slice garlic into slithers
Place garlic, onions, lemongrass, ginger, chilies and carrots into stock and bring stock to the boil
Reduce and simmer for 20 – 30 minutes
Season with salt
Add chicken strips and stir until cooked
Remove lemongrass and chili bag
SERVE AND ENJOY
So this was my comfort soup of the day and I will tell you, I should have made a much bigger pot as I could have eaten much more. If you are anything like me food is a major part of your life, cooking it was probably just as enjoyable today as eating it. And to top off my healing and healthy day I am going to have a apple cider vinegar and honey hot drink (thanks Mum!!).
